They just so happen to be gluten free AND dairy free and are packed with pumpkin flavor. Whoo hoo!<\/p>\n<p>This recipe is based on both my <a title=\"Healthy Banana Oatmeal Pancakes (made right in the blender!)\" href=\"https:\/\/www.ambitiouskitchen.com\/banana-oatmeal-pancakes\/\" rel=\"noopener\">banana oatmeal pancakes<\/a> and my <a title=\"Healthy Apple Pancakes (made right in the blender!)\" href=\"https:\/\/www.ambitiouskitchen.com\/healthy-apple-pancakes\/\" rel=\"noopener\">apple oatmeal pancakes<\/a>, both recipes are made in the blender and require no flour.<\/p>\n<p>Personally, what I adore about these pumpkin pancakes is how perfectly fluffy they are on the inside, plus they&#8217;re just the right amount of thickness and are the ultimate breakfast treat with a drizzle of salted peanut or almond butter + pure maple syrup. Hell yes! Here&#8217;s what you&#8217;ll need:<\/p>\n<ul>\n<li><strong>Pumpkin puree:<\/strong> be sure to use a <a href=\"https:\/\/amzn.to\/3kpmGaF\" target=\"_blank\" rel=\"nofollow noopener sponsored\">pumpkin puree<\/a> that&#8217;s just pumpkin (no added sugars, etc.)<\/li>\n<li><strong>Eggs<\/strong>: you&#8217;ll need 2 eggs in this pancake recipe. I haven\u2019t tested these with flax eggs but let me know if you do.<\/li>\n<li><strong>Milk:<\/strong> I like to use unsweetened vanilla almond milk but you can use any milk you&#8217;d like.<\/li>\n<li><strong>Vanilla extract:<\/strong> for a little boost of <a href=\"https:\/\/amzn.to\/2YjZNfX\" target=\"_blank\" rel=\"nofollow noopener sponsored\">flavor<\/a>.<\/li>\n<li><strong>Maple syrup:<\/strong> these pumpkin pancakes are naturally sweetened with <a href=\"https:\/\/amzn.to\/2YmETNg\" target=\"_blank\" rel=\"nofollow noopener sponsored\">pure maple syrup<\/a>.<\/li>\n<li><strong>Rolled oats:<\/strong> be sure to use <a href=\"https:\/\/amzn.to\/2FowcMs\" target=\"_blank\" rel=\"nofollow noopener sponsored\">rolled oats<\/a> (gluten free if desired) to give these the perfect texture. It will get thicker as it sits so be sure to cook these pancakes immediately after blending.
