Their soft, chewy texture pairs perfectly in some of my favorite salads, works well as a <\/span><a href=\"https:\/\/www.ambitiouskitchen.com\/vegan-pecan-apple-chickpea-salad-wraps\/\" rel=\"noopener\"><span style=\"font-weight: 400;\">vegan replacement<\/span><\/a><span style=\"font-weight: 400;\"> in traditional chicken or tuna dishes and yes, I\u2019ve even tried them in <\/span><a href=\"https:\/\/www.ambitiouskitchen.com\/flourless-chocolate-chip-chickpea-blondies-with-sea-salt-vegan-gluten-free-healthy\/\" rel=\"noopener\"><span style=\"font-weight: 400;\">fudgy blondies<\/span><\/a><span style=\"font-weight: 400;\">. What more could you want in a protein-packed little bean?<\/span><\/p>\n<p><span style=\"font-weight: 400;\">I made this recipe for peanut butter <strong>chickpea muffins<\/strong> back in 2019 and they were inspired by my <\/span><a href=\"https:\/\/www.ambitiouskitchen.com\/gluten-free-flourless-black-bean-brownie-muffins\/\" rel=\"noopener\"><span style=\"font-weight: 400;\">black bean brownie muffins<\/span><\/a><span style=\"font-weight: 400;\">, which are a cross between a black bean brownie and a chocolate muffin. If you haven&#8217;t tried them yet, then what are you waiting for?!<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Now I know you\u2019re probably thinking: beans in baked goods sound weird. But, when blended together with a few ingredients, a touch of pure maple syrup and peanut butter, they somehow transform into the FLUFFIEST muffins you\u2019ll ever eat. Don&#8217;t believe me? Keep muffins for a day at room temperature, then transfer to fridge and place in an airtight container.
